Family Feeds Simple, Fresh Salsa

Hands down this salsa recipe will bring you endless happy mouthfuls for years to come. I use it in salads, on burgers, in fajitas, nachos with fish… you can even add some ginger and cumin and have it with an India starter… it’s diverse and it’s simple to make.

Ingredients
  

  • 1/2 onion
  • 3 ripe tomatoes stored room temperature for a day if possible
  • 1 tbsp fresh lemon or lime juice
  • 1 red chilli
  • handful of fresh chopped coriander
  • olive oil
  • salt and pepper to taste

Instructions
 

  • Finely chop half an onion – the finer the chop the better the end result.
  • Remove the eye of three tomatoes – check out the video to see how I use my knife to quickly remove the eye with a V cut. I do this to make a more neat salsa.
  • Then deseed your tomatoes (this is important because without it, your salsa will be swimming in juice. You can disgard the seeds or add them to a tomato based sauce to avoid waste.
  • Slice and finely chop your tomatoes, again the finer the better.
  • Add a tablespoon of fresh lime or lemon juice.
  • Add a handful of fresh, finely chopped coriander and finely chopped red chilli. You can remove the seeds if you want to reduce the heat. (In the video I seperated some of the salsa for the children before adding the chilli).
  • Finally season and drizzle with a little olive oil just before you serve.
