If you are looking to bring your fajitas to life, create some great dips or add a special something to a sandwich or burger then an easy homemade guacamole is one of the most rewarding sides… and, you can literally throw it together.
I have used this recipe for years. It’s quick, fresh and the kids love it. I was out of lime when I made this video but it is the only way to get the best results, especially when making ahead, so be sure to have them in if you can. I sometimes make this guac for packed lunches and when I do I add the juice of an additional lime to keep it fresh and bright green the next day. Now, there are plenty of reasons to not over lime your guac — but I’m coming at this from a position of rarely being able to make guacamole right when I need it. Give it 10 years…
If you don’t already make your own guacamole then your mind is about to be blown, and I doubt you will want to go back to the dull, tangy shop-bought stuff. Admittedly avocados aren’t a cheap ingredient but this is so yummy that it is worth giving it a go next time you are having a treat!
No-fuss easy guacamole
Ingredients
- 3 ripe and ready to eat avocados
- 2-3 Limes 2 if eating fresh, 3 if making in advance
- 1/2 white onion
- 30 g fresh coriander leaves
Instructions
- Finely dice your onion. This finer the better and add to a big bowl
- Slice open your avocados, remove the stones and scoop out the flesh in to the same bowl as the onions
- Using a fork, masher, rolling pin or whatever you have to hand bash the avocados up until they are well incorporated but leave some chunks for texture
- Squeeze the juice of 2 limes in to the mix and mix thouroughlywith a spoon. If you are making this in advance then add the juice of a third lime
- Chop your coriander leaves, add, mix and serve
